Vegan Coconut Whipped Cream Frosting Recipe
This whipped fluffy frosting is great for decorating cookies, cakes and cupcakes.

- 1/2 can chilled coconut milk white fatty portion will be at the top. use a spoon to scoop out.
- 1/2 tbsp vanilla extract
- 2 cups vegetable shorteninh
- 3 cups powdered sugar
- 1/2 tbsp green or red food coloringoptional
This recipe uses canned coconut milk. In order to get the cream to separate from the clear liquid, chill the can for a few hours before opening. Then scoop the cream out with a spoon. It will be the top portion.In a large mixing bowl add the powdered sugar. Then combine coconut cream and blend on low. Add the vegetable shortening (at room temperature) and continue to blend on medium/high. Splash in the vanilla extract and blend until thoroughly combined.
