Hemp Cauliflower Burger

Hemp Cauliflower Burger

Ingredients
  • 4 flax eggs , 4 tablespoons ground flaxseed plus 12 tablespoons water
  • 1 cup carrots in small pieces , or baby carrots
  • 1 cup mushrooms
  • 1 head of cauliflower
  • Your favorite oil for roasting veggies , or veggie broth if not using oil
  • one can garbanzo beans , drained and rinsed
  • 2 teaspoons crushed garlic or 4 cloves
  • ½ cup chopped chives
  • ½ cup chopped Italian parsley
  • 2 cups hemp seeds
  • 1 cup almond flour
  • sea salt and ground black pepper to taste
Instructions
    1. Preheat oven to 400°F (200°C). Mix 4 tablespoons ground flaxseed with 12 tablespoons water in a small bowl and set aside for 10 minutes to make flax eggs.

    2. Wash and chop veggies. Place them on a parchment lined cookie sheet, sprinkle oil (if using), a dash of salt and pepper and bake at 400°F (200°C) for 15 minutes, until cauliflower is soft but not mushy. Put veggies, garlic, chives and parsley in a food processor, and pulse until chunky but chopped. Do not puree into a mush or paste.

    3. Next add mixture into a large bowl, keeping about a fourth of it in the food processor. Add the beans into the food processor and mix until beans are part puree but still have some chunks. Add to the bowl.
    4. Add hemp seeds, almond meal, flax eggs, salt and pepper to the bowl and mix well. Taste and add more salt and pepper if needed, it should taste good as is raw.
    5. Once you get the taste you like, allow mixture to set a bit so hemp seeds soak in some liquid. The mixture should hold together well, if it does not then mash the beans a bit more.
    6. Shape into 4 inch patties, then cook in pan on stove top over medium heat for 6-8 minutes on each side (depending on stove). Make sure to keep pan covered to help the burger cook throughout. Check every few minutes to prevent burning, should be slightly browned when ready.
  1. Serve on lettuce for a lower carb meal or on sprouted wheat or gluten free buns. Top with Garlic Chive Aioli, and other toppings of choice such as tomatoes, lettuce and red onion. Serve with oven fries, I like to sub purple potatoes for the regular ones.
Recipe Notes
  • I use heaping cups of the veggies. You can sub another gluten free (or non gluten free) flour for the almond meal if you need this nut free. It helps bind the burgers, so if you omit entirely they won’t hold together as well.
  • These get more stable in texture as they cool so allow them to sit for a few minutes before eating.

California Shoe Company Develops Vegan Wool-Free Ugg Boots

California Shoe Company Develops Vegan Wool-Free Ugg Boots

According to Livekindly California-based footwear company Bearpaw has launched vegan versions of its Ugg-style boots, featuring a wool-free lining and suede-free exterior.

The company currently offers three vegan women’s shoes – two Ugg-style winter boots and one slipper – made from microsuede (polyester), a polyester blend lining, and a lightweight rubber outsole. The boots come in the Elle Short Vegan or Elle Long Vegan styles and are available in the colors black or tan. Both styles are treated with NeverWet, which protects the shoes against water and stains.

All of the cruelty-free styles, including the Loki Vegan slippers, have a plush lining that is said to help “[regulate] body temperature to keep your feet warm” while the footbed helps reduce foot fatigue.

Popularized by the brand Ugg, the winter boots are notorious for the use of lambskin, aka shearling, which is skin with the fleece still attached. According to international animal rights group PETA (People for the Ethical Treatment of Animals), millions of sheep are castrated and have parts of their tails cut off without the use of painkillers before being sent to slaughter.

Where to Buy Vegan Ugg-Style Boots

While Ugg has yet to release a vegan version of its signature boots, Bearpaw and other brands are catering to the rising demand for cruelty-free fashion by launching animal-free versions.

DAWGS vegan faux shearling boots are made from vegan microfiber and are available in eight colors, including leopard print and plum. It’s available in 9-inch, 13-inch, and kids sizes.

California-based footwear brand PAWJ makes a vegan fur-lined boot, plus one with cruelty-free fur trim, and slippers. You can also buy Snug Boots made by Vegetarian Shoes from NYC-based vegan footwear store, Moo Shoes. The leather-free boots are made from synthetic suede with a faux fleece lining and rubber soles.

Bearpaws vegan shoes are available online or in stores including DSW, Macy’s, Dick’s Sporting Goods, Walmart, and Famous Footwear.
